QUICK FIX PIZZA


Pita bread from Supermarket...I normally use these three sauces..Perfect Italiano is best mozzarella as per my experience..use vegetable of your choice...
Use highest temperature of your oven...
Just assemble everything ready to eat in 20 minutes
Enjoy pizza with your family...

Chocolate cupcake

Chocolate cupcake (Make 20 cupcakes)
Ingredients
1 1/4 cup all purpose flour
3/4 cup cocoa powder
2 tsp baking powder
1/2 tbsp salt
1 1/2 cup sugar
3 tbs unsalted butter
2 eggs
1 tsp vanilla
1 cup milk

Recipe 
In a medium bowl, sift together flour, cocoa powder, baking powder and salt. Set aside.
Beat together sugar, butter, egg & vanilla until light.
Alternate scoops of the dry mixture with drizzles of milk.
Mix for an additional 1-2 minutes until light and fluffy.
Scoop 1/4 cup of batter until each cupcake tin.
Bake at 325F for 12-15 minutes, until toothpick inserted in center comes out clean.
Allow cupcakes to cool completely before serving..

Carrot Muffins

Carrot Muffins ~ makes 12
Ingredients 
1egg
1cup sugar(1/2 cup brown sugar+1/2 cup white sugar)
1/3 cups oil
1 1/4cups flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoons cinnamon powder
1  teaspoons nutmeg powder
1 teaspoon salt
1 cups grated raw carrots
1/4 cup raisins
1 tablespoon orange zest
1 teaspoon vanilla 

Recipe
Preheat oven to 350 F. 
Sift flour, baking powder, baking soda together and set aside. 
Mix egg, sugar,vanilla, orange zest and oil.  
Now add carrot & raisins in egg mixture mix it with light hands.
Now add flour,nutmeg,cinnamon..
Mix it with cut and fold method..(don't over mix)
Divide mixture into 12 hole muffin tin.
Bake for 15-20minutes.
Check by inserting a toothpick into muffin. If the toothpick comes out clean they are cooked. Leave to cool for 20 minuts.
Enjoy with coffee to tea..

Khatta meetha karela

Ingredients:

250 gms of Bitter gourd
2 Large chopped red onions
1spoon mix of fennel,fenugreek seeds
1tbsp Achar masala
1tbsp turmeric 
1tbsp of red chilli powder 
1tbsp coriander powder 
1/2tbsp sugar 
salt to taste
oil as required 

Recipe
This recipe is done in two parts.
First part* is related to get rid of the excess bitter taste out of the bitter gourd. 
For this, chop the bitter gourd and remove the seeds if they are big and mix 1 teaspoons of salt and 1/2 tbsp turmeric  
Put it aside for 1hour 
Now wash bitter ground with water and dry them with help of paper towel.
Second part*
Heat the oil on a wide pan.
Now add fennel & fenugreek seeds, after they sputter add bitter ground, salt and cook it for 5 minutes then Add the onions cover it and cook for 5 minutes
Add all spices and allow to cook for another seven to ten minutes or until all of them combine together. 
Enjoy it with chapati or parantha
You can keep this for 2-3days..


Bread pakoda

Bread pakoda 
Ingredients 
Bread  - 4 slice( cut each bread in half..u can cut any shape of ur choice)
Besan – 1 cup
1/2 tbsp carom seeds 
Salt to taste
1/2 tbsp Red chili powder
1/2 tbsp Garam masala powder
1tbsp Fresh coriander chopped 
Oil for frying
Recipe
1) Mix besan, carom seeds, salt, red chili powder, garam masala powder and fresh coriander in a bowl.
2) Add little water and make a batter...Heat oil in a kadai..
3) Dip each slice in the batter and fry till golden brown.
Serve hot with mint chutney 
Note- u can sprinkle little chat masala before serving..

Punjabi Kadi-Pakora

1 step is to make pakoda & 2 is to make kadhi
Ingredients(pakoda)
1/2 cup Gram flour
1/4 Chopped finley onion
1 tblsp Corainder leaves
1 tsp Red chili powder
1 tsp Garam masala
Oil for deep frying 
Salt As per taste 

For Kadhi
2 cup sour Curd 
2 1/2 tblsp Besan 
2 tsp ginger
2 tsp garlic
1 onion chopped
2 Dry red chili whole
1/4 tsp Fennel seed
1/4 tsp Fenugreek seed
1/2 tsp Turmeric powder
1 tsp Jeera Powder
1 tsp Coriander Powder
1 1/2 tsp Salt
1/2 tsp Red Chilly Powder
1/4 tsp Garam Masala
1 tblsp Hara dhania (Corainder leaves)
2 tbsp Oil or ghee 

For tempering 
1tbsp ghee
1/2 tsp rai
1/2 tsp garlic chopped
4-5curry leaves
2 red chillis 

Recipe for pakoda
1)Mix all ingredients for pakora except oil for frying.
Now add water to the mixture little by little. The batter should be thick enough for frying pakodas.
2)Heat oil for frying in a kadhai. When piping hot, drop small balls of the mixture in the oil. Fry in batches of 6 - 7 at a time. When the pakoras are golden brown, drain them on a kitchen paper. Keep them aside.
Recipe for Kadi 
In a separate bowl beat the curd and mix gram flour in it.
Blend thoroughly so as to ensure that there are no lumps. Add turmeric powder, salt and 4 -5 cups of water. Whisk well.
Now heat oil in a big kadhai. Add fenugreek, fennel & dry red chilis.When they begin to sputter add onion, ginger and garlic. 
Stir fry for 15- 20 secs and then add turmeric, jeera powder, coriander powder, salt and red chilly powder. 
After 30secs add besan-curd mixture. Stir well and bring it to a boil. Then let it simmer on a slow fire for about 15 minutes. Stir occasionally.
After 15 mins add the pakoras, garam masala and simmer the punjabi kadi for about 5 minutes.

Now for tempring take ghee add garlic, rai,red chillies, curry leaves..after u feel nice aroma pour this over Kadi and Serve the kadhi hot with steamed rice or with Roti....


Orange & tutti fruity muffins


Ingredients
 1/2 cup unsalted butter
 1/4 cup milk
 2 eggs
 3/4 cup caster sugar
1pinch salt
 2 cups self-raising flour, sifted
 1 orange, zested and juiced
 50gm tooti fruity/ some dry fruits 

Method
Step 1****Mix all ingredients together including orange zest and juice..
Put some flour on tooti fruity and mix with your hand..before transferring mixture into muffin tin add this into mixture..
Step 2****Divide mixture into a 12-hole muffin tin.
Step 3****Put in a preheated oven at 180C for 20mins or until the muffins are light brown on top. Check by inserting a toothpick into a muffin. If the toothpick comes out clean they are cooked. Leave to cool for 20mins.

Cold coffee with ice-cream

Cold coffee with ice-cream
Ingredients 
4 tbsp coffee powder
1/2tbsp cocoa powder (optional)
5 tbsp hot water
4 tbsp sugar
3 cups milk
few ice cubes
scoop of chocolate or any icecream of your choice
Instructions
First mix coffee powder and cocoa powder if using with hot water. 
Add sugar and boil for a minute more until sugar dissolves.
Now strain the mixture with a mesh strainer.
Combine 2 tbsp of the coffee solution with milk, 2 scoop of ice-cream and icecubes. Blend until all blends well.
Serve cold coffee in tall glass. 
Garnish with chocolate powder ....
