Ingredients
For Vada
1/2 cup Urad Dal
1/2 cup moong dal
1 teaspoon Cumin seeds
2 chopped Green chilies
Baking soda – a pinch
Salt
Oil – for deep frying
For Yogurt Mixture
3 cup beaten Yogurt
1 teaspoon Roasted cumin powder
1 teaspoon Red chili powder
1teaspoon chaat masala
Salt – to taste
Other
Coriander Chutney
Tamarind-date chutney
Chopped coriander
Recipe
Wash dal under running cold water till water runs clear.
Soak it in enough water for 6-7 hours.
After 6 hours drain all the water
Grind it into smooth paste.
Add cumin seeds, chopped green chilies, baking soda and salt, Mix well.
Now using a spoon, by hand or by electric beater, beat the batter for 5-10 minutes or till it becomes light and fluffy.
Now heat the oil on medium heat for deep frying.
Wet your hand and take about 2 tablespoons of batter
and slide it very carefully into hot oil.you can also use spoon for batter.
Deep fry vadas till golden brown.
Remove it on plate.
Now soak fried vadas in water for 20 minutes.
Take beaten yogurt in a bowl. Add red chili powder, roasted cumin powder, chaat masala and salt.
Mix well. Keep in refrigerator till needed.
Squeeze out the water from vadas.
Arrange vadas in a plate.
Top it with yogurt mixture. Drizzle some coriander chutney and tamarind-date chutney as per your taste.
You can sprinkle sev and chopper coriander as per your choice.
Serve immediately.
