Ingredients
Step 1, Dough
550g white bread flour
7g of dried yeast (usually one sachet)
1 teaspoon of table salt
1 teaspoon of caster sugar
320ml of luke warm water
Pepper to season
2 tbsp of olive oil
Step 2, Stuffing
1/4 cup massed paneer
1/2 cup capsicum chopped
1/2 cup onion chopped
1/2 cup tomato chopped
3-4 black olives chopped
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon pizza toper
1/2 teaspoon italian herb
1 teaspoon clili flakes
salt as per taste
1/4 cup Mozzarella cheese

Step -1
Sieve the strong white flour into a large mixing bowl, add the salt and pepper.
Add the water, yeast, sugar and olive oil into a jug and leave for 3 minutes to allow the yeast to activate.
Slowly pour the wet mixture into the mixing bowl while stirring using a wooden spoon until everything is roughly mixed.
Then, using your hands, further mix and knead the dough until it is elastic and slightly tacky but not over sticky.
Place the dough in the mixing bowl and cover with a damp tea towel and leave for 1 hour until the dough has doubled in size.
Take the dough and knead it for a few minutes to take some of the air out. Split it into two equal parts.
Flour a work surface and using a rolling pin, roll the dough until it is roughly the size of the pizza, Place the rolled out dough onto the tray cover this now keep it aside and let it rise little again
Step-2
Heat the olive oil.
Once the oil is hot add the onions.
After the onions start to translucent add capsicum, tomato and sauté for 2-3 minutes.
Don't leave them to cook for too long or they can burn.
Now add salt & dry herbs.
Now add olives & paneer.
Mix everything.
Stuffing is ready.
Step -3 Assembling the pizza pocket
Preheat the oven on 200C for 20 minute.
followed by stuffing.
Sprinkle cheese on the stuffing close it gently.
Press this with the help of fork, make 1-2 small hole with the help of fork to release steam.
Bake in preheated oven on medium rack for 20-25 minutes or till it is golden from outside.
Cut into desired pieces.
Serve hot with cold drink.
